Have you noticed the world gone a little nutty with the pumpkin spice?
I mean, how did a simple blend of cinnamon, nutmeg, ginger, and allspice suddenly become The Flavor That’s In Everything?
Of course, Starbucks has more than a little to do with it. Those folks know how to make addictively delicious things. I confess to going gaga over more than one of their treats (miss you, discontinued maple oat pecan scone!).
I’m not anti pumpkin spice, you understand. I’m just stunned that it’s managed to worm itself into, well, everywhere.
Aren’t you?
But who are we to buck the tide? Joining the fun is almost always better than standing on the sidelines. (I wish I could go back and tell that to my pre-teen self.)
So let’s give in. With gooey, creamy, dreamy Pumpkin Spice Sandwich Cookies with Cream Cheese Frosting Filling.
Not a bad way to go.
We made these in a cooking class I taught last weekend—a shout-out to new friends from that class, plus ones from another this week on cheese and wine pairing!
