Life has been busy. Stressfully busy. Work and other stuff. Suffice to say—caregiving can really suck.
Thank goodness for adoring husbands.
And soft kitties.
(And you. Yes you, reading this now.)
I used to treat myself to Maple Oat Pecan Scones from Starbucks now and then, but they were discontinued. So I started making my own.
Oaty and whole wheat-y, they have a cozy, almost hippy quality I adore. Yet there’s still the comforting indulgence of a baked treat.
Jam-packed with pecans, they have texture and richness.
And—maple icing. If maple icing can’t put a smile on your face, I don’t know what will.
I’ve been keeping a bag of Maple Oat Pecan Scones in the freezer. If I take one out when I wake up, it’s perfectly defrosted for my second cup of coffee and the most fun parts of the newspaper.
They don’t make life any less busy, but they do make it better.
